  1. Clean chicken pieces and score for better absorption; prepare marinade with yogurt, ginger-garlic paste, red chilli powder, turmeric, garam masala, coriander powder, lemon juice, mustard oil, and salt—mix thoroughly and coat chicken; refrigerate for 4–6 hours.

  3. Grill for 15–20 minutes, turning occasionally and basting with oil or ghee for even char and smokiness.
  4. Check doneness (internal temperature 75°C); rest for 5 minutes to retain juices.
