  • Chicken on bone, onions, tomatoes, ginger, garlic, green chilies, ghee, mustard oil, red chili powder, turmeric, coriander powder, garam masala, cumin seeds, black peppercorns, bay leaf, black cardamom, fresh coriander, kasuri methi, salt

Quick-Made Recipe

  1. Clean chicken pieces and marinate with salt, turmeric, red chili powder, and a little ginger-garlic paste for 30 minutes; meanwhile, finely chop onions, puree tomatoes, and make ginger-garlic-green chili paste.
  2. Heat ghee and mustard oil in a heavy pot until smoking, add whole spices (cumin, peppercorns, bay leaf, black cardamom), then fry onions until deep golden.
  3. Add ginger-garlic-chili paste and cook until raw aroma vanishes, then stir in tomato puree and powdered spices (red chili, coriander, turmeric); bhuno on medium heat until oil separates.
  4. Add marinated chicken, increase flame to sear pieces, then pour hot water, cover, and simmer on low for 25-30 minutes until chicken is tender and gravy thickens.
  5. Finish with crushed kasuri methi and garam masala; garnish with fresh coriander and serve hot.
