Quick-Made Recipe

1. Knead all-purpose flour with water and salt into a smooth dough; rest covered for 30 minutes while preparing the filling with finely chopped vegetables (or chicken), ginger, garlic, soy sauce, sesame oil, pepper, and coriander.
2. Roll dough into thin circles, add a spoonful of cooled filling, then pleat and seal into half-moon shapes with a flat base for optimal pan contact.
3. Lightly grease a non-stick pan, arrange kothey momos flat-side down, and fry on medium heat until the bottoms turn golden and crisp.
4. Pour a little water into the pan, cover immediately, and steam for 6-8 minutes until the tops become translucent and the filling cooks through.
5. Uncover to evaporate remaining water and re-crisp the base briefly; serve hot with spicy tomato-sesame chutney.
