- Crack two free-range eggs straight into the pan; for Sunny Side or Plain, cook undisturbed until edges turn lacy and yolks remain liquid (2–3 minutes). For Masala, first sauté finely chopped onion-tomato-green chilli mix with spices until soft, then pour beaten eggs over and scramble lightly or fold into a soft bhujia.
- Season generously with sea salt and cracked pepper; for Masala, finish with fresh coriander.
