Savor the hearty, soul-stirring Amritsari Mutton Curry, a Punjabi classic in which succulent mutton chunks bask in a rich, fiery onion-tomato masala infused with fragrant whole spices. This curry brings the vibrant dhaba culture of Amritsar to our comfortable, high-end café table. It is rich, meaty, and exquisitely balanced with a lingering warmth, making it ideal for leisurely, decadent dinners shared with friends.

Key Ingredients

  • Mutton on bone, onions, tomatoes, ginger, garlic, green chilies, yogurt, red chili powder, turmeric, coriander powder, garam masala, cloves, black cardamom, cinnamon, bay leaf, ghee, fresh coriander, kasuri methi, salt

Quick-Made Recipe

  1. Wash and marinate mutton with yogurt, ginger-garlic paste, red chili powder, turmeric, coriander powder, and salt for 1–2 hours; meanwhile, finely slice onions and puree tomatoes.
  2. Heat ghee in a heavy pot, crackle whole spices (cloves, cardamom, cinnamon, bay leaf), then fry onions until deep golden, add ginger-garlic-green chili paste, and cook until raw aroma disappears.
  3. Stir in tomato puree and powdered spices; bhuno on medium heat until ghee separates, then add marinated mutton and sear on high flame for 8–10 minutes.
  4. Pour hot water to cover, add kasuri methi, cover, and slow-cook on low flame (or pressure cook 6–7 whistles) until mutton is fall-off-the-bone tender.
  5. Finish with a sprinkle of garam masala and fresh coriander; serve piping hot.
