Quick-Made Recipe
- Wash and marinate mutton with yogurt, ginger-garlic paste, red chili powder, turmeric, coriander powder, and salt for 1–2 hours; meanwhile, finely slice onions and puree tomatoes.
- Heat ghee in a heavy pot, crackle whole spices (cloves, cardamom, cinnamon, bay leaf), then fry onions until deep golden, add ginger-garlic-green chili paste, and cook until raw aroma disappears.
- Stir in tomato puree and powdered spices; bhuno on medium heat until ghee separates, then add marinated mutton and sear on high flame for 8–10 minutes.
- Pour hot water to cover, add kasuri methi, cover, and slow-cook on low flame (or pressure cook 6–7 whistles) until mutton is fall-off-the-bone tender.
- Finish with a sprinkle of garam masala and fresh coriander; serve piping hot.
