Saffron, kewra, and whole garam masala-infused long-grain basmati rice are piled over tender bone-in chicken that has been marinated in aromatic spices and yogurt. Perfectly slow-cooked in the classic dum method, it creates an enticing aroma and combines crisp fried onions, delicious pork, fluffy distinct grains, and fresh herbs to create a harmonious explosion of tastes. Key Ingredients

  • Basmati rice, chicken (bone-in), yogurt, fried onions, ghee, saffron, kewra water, rose water, mint leaves, fresh cilantro, ginger-garlic paste, green chilies, whole spices (bay leaf, cinnamon, black cardamom, green cardamom, cloves, mace, star anise), biryani masala, lemon juice, salt

Easy Recipe

  1. For deep flavor, marinate chicken pieces in yogurt, ginger-garlic paste, biryani masala, green chilies, half of the fried onions, mint, cilantro, and lemon juice for two to four hours.
  2. After 30 minutes of soaking, parboil the aged basmati rice with whole spices until it is 70% cooked, and then drain.
  3. The marinated chicken should be layered at the bottom of a heavy-bottomed saucepan, followed by parboiled rice, ghee, saffron and kewra-infused milk, the remaining fried onions, mint, and cilantro.
  4. Tightly cover with foil or dough, cook for five minutes over high heat, and then cook on low heat for twenty to twenty-five minutes to release the scents.
  5. After ten minutes of rest, gently combine the layers and serve hot with a beautiful garnish.
