Easy Recipe
- For deep flavor, marinate chicken pieces in yogurt, ginger-garlic paste, biryani masala, green chilies, half of the fried onions, mint, cilantro, and lemon juice for two to four hours.
- After 30 minutes of soaking, parboil the aged basmati rice with whole spices until it is 70% cooked, and then drain.
- The marinated chicken should be layered at the bottom of a heavy-bottomed saucepan, followed by parboiled rice, ghee, saffron and kewra-infused milk, the remaining fried onions, mint, and cilantro.
- Tightly cover with foil or dough, cook for five minutes over high heat, and then cook on low heat for twenty to twenty-five minutes to release the scents.
- After ten minutes of rest, gently combine the layers and serve hot with a beautiful garnish.
