Missi Roti

Our Missi Roti is a robust Punjabi flatbread that adds fire-kissed warmth to every bite. It is rustic, golden-brown, and brimming with smoky-spiced aroma. Served directly off the tawa at Avayacafe, this crisp-edged but softly chewy dish is coated with ghee and is great with curries or just shredded and dipped in yogurt.

  • Chickpea flour, whole-wheat atta, ghee, red chilli powder, coriander seeds, carom seeds, kasuri methi, fresh coriander, onion, green chilli, pomegranate seeds, salt

Quick-Made Recipe

  1. Mix chickpea flour and whole-wheat atta in equal parts with finely chopped onion, green chilli, crushed coriander seeds, carom seeds, kasuri methi, fresh coriander, pomegranate seeds, red chilli powder, salt, and a spoonful of ghee; knead into a firm dough using warm water.
  2. Rest the spicy dough for 15–20 minutes so the flavors deepen and the gluten relaxes.
  3. Divide into balls, roll each into a 7-inch disc slightly thicker than regular roti to keep the texture hearty.
  4. Cook on a hot tawa over medium-high flame; once bubbles appear, flip, brush generously with ghee, and cook both sides until beautiful charred spots form and the aroma turns irresistible.
  5. Serve immediately, brushed with extra ghee and lightly crushed in hand for that signature rustic presentation.
