- Mix chickpea flour and whole-wheat atta in equal parts with finely chopped onion, green chilli, crushed coriander seeds, carom seeds, kasuri methi, fresh coriander, pomegranate seeds, red chilli powder, salt, and a spoonful of ghee; knead into a firm dough using warm water.
- Rest the spicy dough for 15–20 minutes so the flavors deepen and the gluten relaxes.
- Divide into balls, roll each into a 7-inch disc slightly thicker than regular roti to keep the texture hearty.
