Quick-Made Recipe
- Knead whole-wheat atta, a little all-purpose flour, salt, ajwain, chopped coriander, and ghee into a soft, pliable dough; rest covered for 30 minutes.
- Divide into balls, roll each into a thin circle, brush generously with melted ghee, sprinkle kasuri methi, then fold concertina-style and coil into a spiral.
- Roll the spiral gently into a 7–8 inch disc, keeping all the beautiful layers intact.
- Cook on a hot tawa with generous butter until deep golden-brown spots appear on both sides, pressing edges with a cloth for maximum flakiness.
- Remove when crisp outside yet soft within, brush with extra ghee, and serve immediately.
